Kenneth Kendall, Bill Giles and Sue Cook made cameo appearances in the brilliant series Edge Of Darkness back in 1985 (most of the Kendall appearance has been cut out of this video though)

Pretty much everyone in Extras, of course. And I seem to remember Terry Wogan turning up in an episode of Being Human once.
Not exactly a TV person(!), but I'm reminded of that gag in an episode of Red Dwarf featuring archive footage which began with the caption "Special Guest Star - Adolf Hitler as himself"
Brian Williams appeared in Family Guy and had many appearances on 30 Rock.
Murphy Brown had numerous amounts of journalists of that era on. Katie Couric, Joan Lunden, Paula Zahn, Mary Alice Williams and Faith Daniels all appeared at the Murphy's baby shower treating her as peers. Connie Chung appeared in an early episode where Murphy was asked to guest star in a sitcom and Connie had a line that was to the extent of what respectable journalist would do a sitcom.
30 Rock pretty much had the whole A-List of NBC News on at one point or another.
