It just means it's open for at least 3 working days, I don't understand the confusion.
Just a query, what does it actually mean when it says "online entry open for at least 3 working days"?
Is that 3 days after the closing time for phone/text? Sorry if I'm missing something here but just a little confused
Apologies if this is in the wrong forum, not 100% sure where to put it

It means what it says.
However to give a fuller answer, I refer the honourable original poster to the following document on the Gambling Commission's website, in particular section 4 but mainly paragraph 4.6 and it's sub-sections:

My confusion comes from when there is a competition that runs for 5 days (sometimes longer) Does this mean the competition is only open online for 3 days within those 5 or what...?
Am I being stupid here or something? (Rhetorical Question)

:
If you read the small print you usually find that the terms state along the lines of "Lines close at 10am tomorrow, don't phone after this time, enter for free at <the website> which remains open for at least three working days".
The three working days is explained in the document I've linked to above. Anything longer is usually specifically stated in the terms.
To be honest I don't quite see what point you're trying to make. This isn't exactly a state secret, everything you'd need to know would be on the screen.
