Why is it on a Sunday?
JO
Because that’s the night of the week, where it will perform best in that market?

It's been tooted as Sunday Night Takeaway ever since there was first talk of Seven taking the format in 2016:

Must be a cultural thing to do this sort of thing over there on a Sunday.

Possibly too faithful to what works for Ant and Dec and not embracing Chris and Julia's personality enough. They threw a bit too much at episode one really rather than holding back - some features which came in later series of SNT don't work so well from episode 1 as you've not got that history of the show - for example the "Happiest Minute of the Week" developed from the shows history of giving out prizes and highlighting some deserving individuals.
I do think it's in the wrong slot though - aired at 7.30pm, was supposed to be in a 90 minute slot but as all Aussie shows do it over ran and aired through to 9.30pm. With the biggest show in Australia (Married at First Sight) head to head with it I think they should have got to air an hour earlier to capture that family audience, especially as Aussie TV pretty much switches off at 8.30pm.
They’ve been very faithful to the original, with the set, the music, the star guest announcer booth, even down to the right hand co-host being small!
