I am curious how the switch off will happen, if it does. Will they remove the channels from the EPG, or will the signal be switched off or a placeholder shown?

I'm not sure what will happen as they haven't confirmed a time for them leaving. This is what Discovery have said:

From 1st February, 13 channels of our channels may disappear from Sky and NOW TV.

They haven't confirmed a date or time. Theoretically, they could all be replaced with a placeholder at random times (although it is unlikely). I predict there will either be a generic placeholder slide at a random time, or it will just disappear. Hopefully like Plus in 2004 but with Discovery branding.

Mainly Investigation Discovery here, for other factual entertainment, I go to Nat Geo/Wild.

It wouldn't surprise me if Sky throws the decision back to Discovery. They could say we will continue to broadcast the channels under the terms that Sky propose, meaning that it'd be the decision of Discovery to continue to broadcast or not. That'd be a real twist in the tale.

Is the ticker only going out on the Sky feed? I've been checking on VM and there's been no sign of it.

There isn't a separate feed for providers (technically pointless), the ticker appears periodically.

If Dixit happens I can't see them leaving the platform surely they're just offer their channels in a standalone package on the platform.

If they leave the EPG when if they do sort something out they'll have lost their EPG positions. I really think Sky are in the stronger position here and they might just Discovery go as a lesson for others.
