They are encrypted channels. If they disappeared from the EPG they could be found through the 'Add Channels' option, but not to watch, unless Discovery Networks take the ultimate hit and make them FTA/FTV (although surely there would be rights issues regarding that).
Thick question coming up will they still be available through other channels or taken off satellite altogether

Can you add DVB-S2 channels via Add Channels now? At one point you could only add DVB-S stuff (or at least a limited range of symbol rates)

Yep - Virgin will get a high quality feed of most channels (to allow them to do a high quality local compression without concatenation), rather than just rebroadcasting an off-air (which has already been heavily compressed by the originating platform operator/broadcast uplink).

I presume the likes of Virgin Media get a line feed of these channels then?

I also noticed that new thumbnail.
http://i66.tinypic.com/sztydx.jpg
It currently still includes everything from the Discovery channels,
http://i67.tinypic.com/sgpajd.jpg
so if you think it looks 'thin' now, it could be almost transparent by Wednesday morning.
Worth noting that since this morning the main Sky+HD menu now has a Discover Documentaries thumbnail, having a glance over, it's looking a bit thin on content.
