The BBC iPlayer UHD HDR DASH manifest contains 2160p, 1440p, 1080p and 720p HDR HLG variants for example - it would be relatively easy for BT to deliver a restricted DASH manifest to mobiles removing the highest resolution tiers

Amazon are doing their own streams, not BT.
(On my phone, OBs which are native UHD SDR will only launch the HD channel, but UHD HDR will go to Ultimate, I believe in HD. You can tell whether you're on the HDR variant of Ultimate because the word 'ultimate' on the bug is brighter.)

Liking the All day feed and throw from Jim Rosenthal at Selhurst Park to Darrell Currie at Stamford Bridge at 5pm, shame it wouldn't be there for the Everton game later.

..... unless, although it seems unlikely given the current C19 circumstances, they wanted to shut up their Football operation for the season after their currently allocated final match on 16th January.

Their football operation is S+V & BT Sport, which is not shutting up shop any time soon!

.... I think you misunderstood, I'm considering the extended contracts for engineering and personnel, that'd be necessary etc. I'm by no means doubting that it'll happen just that it would seem 'a bit of a palaver' to restart/extend them for a match that'll probably be moved to April.
