Unfortunately I doubt that OFCOM will share that view, and it wouldn't suprise me if Charles Dance doesn't get invite back to any live pre-watershed ITV programmes in a hurry. I can't blame Paul O'Grady being nervous though, as if I recall he is one of the executive producers.
Did any watch the interview with Ozzy Osbourne a while back? He managed to avoid swearing in the interview, just although nearly said the 'f' word. For that interview they decided to have a large 'beeper' button, though I wonder if that particular interview had a couple of minutes delay instead of going out completely live.

I think I'm right in saying the programmes at the beginning of the week are live, but the ones towards the end of the week are pre-recorded. In which case, it would seem that Charles Dance was live (today being a Tuesday) while, if the producers had their senses, Ozzy Osbourne appeared on a pre-recorded show?

Correct. Ozzy appeared on a Friday (the show filmed on Wednesday lunchtimes).
And yes, Paul is one of the executive producers.

I've noticed on a few occasions Paul has given the caller a visual clue, then realised the caller can't see him. So not all of the callers play live, and obviously they can't play live when the show is pre-recorded, they just play as-live at whatever time of the day it is recorded. That would also explain why some of the callers seem so thick, because you have to hear the tune with the cheering and singing of the audience down a phone and not on the better quality sound of a television.
I don't think you're ever actually told the game is live when it isn't, you're just led to believe it is because it would take too much explaining otherwise.

I'd think all callers would only hear down the phone- if you leave the volume of the TV up you'd get feedback. Radio and TV call screeners nearly always tell callers to turn mute the tv/radio.

Wasn't TOO bad, he started off with 2h1t and Paul was joking "You cant say that at 5! We can say poo but not the s word..." then not so long after he made refrence to a joke where the pun was "w@@nk1ng" (something along the lines of... the americans say there are two schools of acting... one and the other (cant remember lol) and she said... in england we call that w@@nk1ng). He also talked about a card game called "B11ch" which the two dames played during the long waits at the last film he did (he wasn't swearing for the sake of swearing.. it was the name of the card game).
Paul joked that he will get loads of complaints (I was sitting down eating my fish finger butty and charles came out with all this filth!) etc
The swear filter might block ^^^ but hopefully you'll work it out.
