Which platforms will it be on: to use Valley's term: unclear, but would be surprised if it was free-to-air on satellite for manual tuning purposes.
Could Pick HD be on a satellite with a narrow beam in order for Freesat viewers to be able to see the games? It would be quite frustrating for Freesat viewers not to have any access to these games considering that this small part of audience would have rightly assumed they would be able to watch these games.
Just seen that these Pick HD tests are indeed on a UK only transponder. So it seems like the games will be Freesat but only on the HD version with SD version presumably showing the normal schedule.

The normal schedule may be on the "Pick Alternate" channel.
They will need to show the games on both SD and HD channels, as some viewers may not have access to the HD channel.
When Pick showed the Swansea vs Man Utd in 2013, they only showed it and the rest of the Sky Sports simulcast on Freeview, where as Pick on Sky (and Freesat) ran with a normal schedule. Sky made the Sky Sports channels FTV on this day. But that was only once when it happened, maybe Pick Alternate is this? As said Sky One will be showing all the matches intended for Pick.
Almost certainly given that Pick is FTA on a transponder that - with the same signal strength - covers all of France, half of Germany, as well large parts of Spain and Portugal. (It'll be fairly easy to receive further than this with a bigger dish.) So the Premier League - and the rights holders in those countries - wouldn't be delighted if there were 25 FTA games available, whatever the circumstances may be.
The BBC will be fine because their transponders have a spot beam very tightly focused on the UK & Ireland. They do overspill into Northern France and Belgium, but the signal strength drops off very rapidly after that. The Premier League will be aware of this already, and the BBC only having four games - and low choice ones at that - making it a very different issue to the 25 Pick will show, amongst them some of the highest profile matches.

I get the impression Pick SD will just take the Pick Alternate version on Freesat. With no access to matches for SD viewers. Unless they're also testing another SD version Pick? Presumably that's the only reason Pick Alternate needs to exist as they could just swap the feeds otherwise.
There is precedent for this, since FreeSports went HD there has been no SD version on Freesat.
