I was watching TV this morning and I saw a piece from the programme today of the same name called 50 Years of ITV (the episode in which it celebrated 50 years of ITV news). I'm wondering if that segment is on every weekday this week or just every thursday as I'm wondering whether I missed any episodes or not and if so which episodes I have missed.

It's on every Thursday on This Morning for some time, the only one you have missed was looking at Soaps, which was shown last week, it mainly looked at Crossroads (original version), Emmerdale and Coronation Street, also whilst interviewing Bill Roach.

Don't know how many they've made though.

I think it's just on every Thursday. As I'm on the late shift this week, I've watched a bit of This Morning throughout the week and there has not been any sign of this feature being shown elsewhere.

Today's segement as you mentioned showed 50 years of News. Although at the start, they showed early idents of ABC, Anglia (no knight on horse) and Granada (just the arrow) Of course, it's was all cropped etc.
