As with any edit job it's down to what material you have, budget and time.
Watch the show and note down the best sections and go from there.
If it's for a TV station, any graphics will probably have a corporate look which will include fonts.
The same look may in the show itself unless it's been bought in from another company.
The BBC's "Who Do You Think You Are?" USA versions were a good example of this. A similar content but differnt captions and styles seem at odds with the UK originals which may explain why they were tucked away on a late sunday evening schedule.
