Indeed, they did this for two seasons, starting in 2000. In those days there was lots more Champions League fotball because of the second group stage, ther would be a match most weeks, so on those occasions they did indeed show Corrie on ITV2 at 7.30 and repeat it on ITV at 9.45. They did that on every occasion in 2000/01, and for the first half of the 2001/02 season, but as you say, for the second half of that season - when the football had the potential to go to extra time and Corrie to go out very late (after the 2001 final it went out at 10.50, the latest ever) - they showed Corrie on Tuesday instead. And then the following season the football was on Tuesdays instead.
The 9.45 Corrie on Wednesday was a regular thing for a while, and in 1999 they moved Tonight to Wednesdays at 10.15, after Corrie, because it hadn't been doing very well on Thursdays and they hoped Corrie might give it a bit of a leg-up. Everyone forgets what a flop the original hour-long Tonight was, it didn't catch on at all and was endlessly threatened with the axe.
At some point in 2000 when ITV broadcast the Champions League on a Wednesday night the decision was taken to show Coronation Street on ITV2 at 7.30pm, and then on ITV at about 9.45pm.
