Are Sky just (sub)leasing the transponder to ITV or are they handling uplink as well? Also - is the Sky transponder DVB-S2 and the ITV transponder DVB-S? (The original ITV HD on Freesat was DVB-S)
The ones Sky are handling are in 1920x1080i, presumably ITV pay for the 1440x1080 transmissions.
The 1920 vs 1440 issue is slightly moot. The two main HD origination formats (HD Cam and DVC Pro HD) are both 1440x1080 on tape.
(Live stuff, movies and high-end stuff shot to HD Cam SR or similar can be 1920x1080 - but the bulk of stuff being broadcast won't benefit from 1920 horizontal resolution. This will change as XDCam HD and AVC Intra becomes more widespread - as they are 1920x1080)

but why is the default feed meridian (local news and weather is from the meridian region) ? I somehow thought it would be london? and given that london is the most densely populated region, it would make some sense, surely?

There are a few HD regions now lobster, I'm not sure how many but London, Meridian, Central and Granada are all on HD, the Regional split only came last month, but prior to that we were getting London.
Surprising really they've put Meridian as one of the regions - I guess though outside London it is probably one of the bigger regions.
Looks like they've chosen one from the south, one from the midlands and one from the north... and I'd assume Meridian has a bigger audience than West and/or Westcountry.... it's certainly more prosperous

I think there is supposed to be a Wales & West/Westcountry macro region appearing at some point. No doubt that will show the Welsh regional news.
We currently receive Central, so the 'local' news or advertising isn't relevant if you're in Penzance!
