Move down to the channel called "10072" and press yellow, then select. If you then go back to Set-up and "Other channels" and select the one called "10072" you will have the ITV4 test signal.
EDIT: Although they are obviously showing M&M at the moment. Later it will be the ITV4 promos again (at 9.55pm)
Not sure, I have generally seen them on during the day and early evening. I would imagine they will increase in frequency as we get closer to next Tuesday.
The fact there are " EPG Tests" does not ring true with the intended delay of the launch on Sky until 7 November.

I can't see ITV managing to sqeeze another channel onto that MUX, unless they are aiming to reduce the signal strength back to the ON/ITV Digital days....and that wouldn't be clever I imagine that either ITV4 and ITVNC will share, or NC will come off freeview (they didn't seem to bother about losing it before).
I always believed that the DCab companies (Telewest, ntl etc) always took their feed from satellite for most channels. That was certainly the case when I had cable in Teesside from Comcast, and certainly the Telewest building in Plymouth has very large dishes outside which are clearly for high quality reception.

I think nowadays esp DCab it's a bit of a mixed bag some are DTT, some satellite and some fibre feeds. For example ABC1 on TW was going off at 6PM with the DTT feed for ages after Sky started going later as that's the feed they were using.Good article on Digital Spy about where cable get their feeds here.
The ITV 4 launch is so spookily similar to ITV 3.
I mean ITV News did close temporarily to make way on Freeview for ITV 3, may will happen permanently to make way for ITV 4.
ITV said ITV 3 would not replace GSB service Granada Plus but did on the launch day. ITV 4 it is claimed will not replace GSB service Men and Motors, only time will tell.
ITV3 wasn't going to launch on DSAT on day one but did because of above. ITV 4 who knows.
The only difference this time is ITV 4 still hasn't got a carriage deal with Telewest only NTL.
In some ways the motivation to shut another channel for ITV 4 is stronger than with ITV 3. In the ITV 3 case shutting Plus got them an EPG slot on Sky. In the ITV 4 case shutting either M&M or ITV NC would get them an EPG slot on Sky and give them the bandwidth on Freeview. Added to this the lack of a TW carriage deal makes the situation worse than ITV 3. Does ITV ever learn?

It wouldn't be the signal strength that is reduced - it would be the data rate of each channel, and therefore the video quality. ITV/C4 and Five's muxes still use the same transmission system (64QAM) that ITV/ON Digital did, to deliver 24Mbs per mux, but in a less robust manner.
The BBC and the other Freeview muxes moved to 16QAM to get 18Mbs per mux - but in a form that is more robust (so suffers fewer freezes/drop outs)
When analogue switch off happens the Beeb and Freeview are likely to return to 64QAM - but change from 2k to 8k modulation - which will mean the signal is as easy to receive - except on the very first set of ONDigital boxes which won't cope with 8k transmission.

I think they used to use DTT for ITV and the BBC because ITV weren't on satellite, and neither were the BBC regions, so the only source of off-air reception of your correct local programme was DTT. It was definitely the case at one point, as when the BBC introduced stat muxing on Mux 1 on DTT, it caused problems with cable re-broadcast as the instantaneous bitrate could exceed what the cable cos could carry on their QAM system.
Since ITV and the BBC are now on satellite this may no longer be the case. In fact it may be that now NTL and Telewest provide pretty much al the cable coverage, they may be able to get fibre feeds of the main channels.
