Scott thing is correct, although as we know the new character had stuff all to do with the original character both physically (actor-wise) and show-wise. Some people liked the new one (Hymagumba), other liked the old one (James Martin). Let's leave it at that.
People do grow when they get older, but things like hair and eye colour, along with facial features, do not change. I've known one person since she was 10 - she's 18 now and she's had a few different hairstyles but that's the size of it.

You can change your the hair colour, granted (hair dye for example) but AFAIK it is not possible to change your eye colour, or at least not without spending shed loads of money (which Tracey Booth would not have had anyway). The original Scott has green eyes, the new Scott had brown eyes.
Hmm. Only blue eyes ever change colour. Stupid Carlton.
Don't be so ridiculous, there is a history of different actors playing characters in soaps, often because the producers want the character to be portrayed differently and the original child actors just didn't measure up.
ie. Corries Tracey Barlow, Nick Tilsley and Emmerdale's Robert Sugden, Scott Windsor there are probably loads more.
