I think its because its near the end of the music track. The title music actually starts running when either a celeb is evicted and crosses the bridge at the end and Ant and Dec do their signing off. Therefore by the time the credits roll we hear the added brass hits.
Looks like the plug has been pulled on the Bush Tucker trials since Kimberleys accident. Yesterday it was jungle bowling - with the most dangerous element being getting wet, while today's Lilipad Lottery was the same.

Talking about the music, isn't it strange how IACGMOOH! Live uses a 'dirty' bit of music with the end of Ant & Dec's scream at the start.
