And either way it's not stating "This is what ITV thinks" - it's showing behaviour which they are hoping viewers find unacceptable in the hope they understand what they are being shown rather than running off to OFCOM.

It was quite clear that he meant Eric's CHARACTER was being racist as part of a storyline. As we saw later, Eric's son virtually disowned him as he has a mixed-race daughter. ITV isn't being racist, Emmerdale isn't being racist, and Chris Chittell isn't being racist. Its a story.
