Does any one know if there a difference between ITV and Stv players. Such as operating system or type of flash used. I know stv had high ress before itv.
They both require the Adobe Flash Player plugin, if that's what you're getting at. When you say operating system,
are you referring to what operating system their streaming servers run, like Windows or a specific Linux distro?

What makes them tick. I lead to believe there work of different systems.
In that case, Netcraft.com has the answers. This site can dig deep down to find out what sort of server technology
a website is running. ITV.com runs on Microsoft's IIS webserver software, and according to Netcraft.com, they're
using Linux as the OS, which can't be right, since Microsoft IIS can only offically run on Windows.
Meanwhile stv.tv is running on Apache webserver software, and the OS is Linux, Which is far more likely since it's
open source, cross platform, and free to download, and run on Linux/UNIX, and of course good ol' Windows.
AIUI ... Apache isn't downloadable separately for Macs, as it's already included with Mac OS X.

It can't "have the answers" if you KNOW they got it wrong, can it?

Are the players different? You would think it would be easier to find out.

Unless they have a layer of caching servers between the IIS based servers which render the pages and your computer, which happen to be running a version of Linux.
All Netcraft does is give you the headers sent out by the sites webserver, it doesn't actually say much about how the services are run. For starters its likely the servers streaming the videos are running entirely different software.
