I know what you mean, when Christine & Adrian were the faces of Daybreak, Sue really felt like the mother figure, baking cakes for Adrian on his birthday and always being really polite and caring. Although I think that Lorraine could also have that feel and that it could work equally as well.
Lorraine is popular with most age groups in a way Sue will never be. For example she obviously has no problems doing breakfast TV, yet she has very good reviews when she crosses into other types of programming such as Never Mind The Buzzcocks or when she did Friday Night Project a few years back. I get the impression Lorraine is popular amongst students which is a good audience for them to go after.
I also think Sue is slightly too conservative for Daybreak (not in the political sense). She's more 'BBC Breakfast', but that's why she works so well on Daybreak in her current role because she gives a good contrast and has authority with her reporting.
An idea stuck me today, I would have loved to see Sue presenting the main show.. Just a thought but the more i think of it, the moreI think that it would work!
