Judging by Fiz's "it's Wednesday" remark, the Corrie team weren't informed of the day change that far in advance.
That said, I often get confused with Corrie days; whenever they say something's happening tomorrow or happened yesterday always got me confused if there wasn't an episode tomorrow or yesterday. Maybe that's me just being simple...
It can be confusing knowing what episode is set on which day. Back in the day when there were just 2 episodes a week it was set on a Mon and Wed normally and then time would have moved on by the following Monday's episode. Storylines seemed to be done in blocks and we had the same characters appearing in both the Mon and Wed eps often with small storyline themes that would last just the two episodes. There were some bigger storylines which lasted several weeks of course. Now things get dragged out for weeks and months sometimes. We rarely saw weekends in Weatherfield but on a few occasions the Monday episode would be set on a Sunday. When we got a Sunday episode that was often set on a Saturday. Now we seem to be back to no weekends again!
Some eps are done in real time like Liam's death which was set the same day over 5 episodes.
That said, I often get confused with Corrie days...
Back in the day when each Corrie episode was only ever shown once, I suppose it was important for them to keep the storylines matching the broadcast days.
I'm sure these days quite a few people watch either the omnibus or ITV2 repeats, so the references are less important and are more to show the passage of time over the course of 5 episodes.

Good point Stuart - people had to make an effort to watch Corrie at 7.30 on Monday/Wednesday because that was the only time it was shown. These days as you say there are loads of repeats plus people have Sky Plus/Virgin Media On Demand and the internet so you can more or less watch Corrie anytime you want. This prob has a huge knock on effect on ratings but I think Corrie is still the highest rated UK show most weeks for its first screening of episodes.
Oh, the sight of Kevin snogging Tyrone's wife/girlfriend/partner in the park whilst out jogging together. Yuk. And just how many extra-marital affairs and indiscretions have Sally and Kevin Webster actually had? Too many to be believeable, even in Soapland.
