As rib-tickling as I'm sure you find it, actors do struggle to find work outside of those roles in major soaps. The public tend to pigeon hole those in soaps so much that casting directors won't look twice at someone like Tina (who is a very good actor).
Look at how you still call Michael Starke "Sinbad".
Its because of these associations stuck in the heads of audiences that actors can't move on.
Fair enough - that's the price they pay when they decide to take the luxury of regular work.

Sarah Lancashire on the other hand is more talented and didn't play Raquel in everything she went on to do after Corrie (until she suddenly disappeared).

You're wrong - and you're missing the point of being an actor in this day and age.
Decades ago, when repertory theatre was alive and well in the UK, a core of a dozen actors may well have played 6 or 7 characters in a season on plays. At age 25 you might be expected to play a late teen, an old man and anything in between. You were required to use accents (depending on where the piece was set) and use makeup to transform yourself.
Nowadays, if they want a Liverpudlian they
cast
a Liverpudlian. If they want someone in their late 40s then that's who they find. Its much more rare for television actors to be asked to play something outwith their age range and natural accent. That's how it works when there are thousands of equity performers of all ages and creeds seeking work.
Suranne Jones didn't play "Karen" in other dramas, she played "Suranne" just as she did in Corrie. That's not a lacking on her part it is how she is cast - and it is a failing on your part not to be able to disassociate her from previous roles.
Audiences who say, "She can only play Karen" or, "He's just playing Sinbad again" is
exactly
the reason these actors get stuck for work in the future.
There are always exceptions who prove this rule. Sarah Lancaster payed Raquel as an extreme character, but in a more naturalistic role you'll see she seems "similar" to her own persona.
You might not like an individual actor's style, but that doesn't mean you're necessarily correct in saying they, "can't act".

I laughed when I read an ITV quote in the Daily Mirror '..obviously they don't agree with millions of viewers who watch Coronation Street'. They still think the show is good because millions tune in, when will they realise viewers want quality over quantity?

No, it's been doing well but I don't think it really did enough to top any of Corrie's five episodes. Apart from the final which did leap quite a bit from the previous week and was the most watched show last week.
