I would have thought that covering such a thing live would be a major technical undertaking, the sort of lengths not normally gone to for such a minor event
Yep - the costs involved in covering a cross-channel event would require a BBC One rather than a Press Red level of budget. You're talking about multiple satellite and RF camera links, mid point helicopters or gyro-stabilised uplinks, a full OB unit on one coast and LOTs of comms so that everyone knows what's going on, and you'd need some presentation elements otherwise you've just got multiple views of someone stood up behind a boat or falling in. I very much doubt Christine is going to want to "present" whilst doing something so physically demanding...
Much more cost-effective to cover it with multiple camcorders and edit a decent package together showing the interesting bits.
