Regarding CBBC Choice, I'd only ever seen the jelly ident, as that was presumably the only one that had ever been on a website. They'd rebranded to just CBBC before long.

Did CBBC Choice air daily throughout the day or just in selected slots across the week. Also didn't it air classic children's content too?

You're thinking of 'CBBC on Choice' - a subtle difference, I know, but it was very different from the original 'CBBC Choice' that you see here which I believe was a weekend afternoon slot. That ended when BBC Choice had its big revamp in 2000 (around the time Liquid News started) and it became less of a general entertainment channel alongside One and Two, and more of what Three eventually became, with more adult programming.
I'm not entirely sure, but I believe that's why they decided to separate the branding a bit and 'CBBC on Choice' became a weekday slot until 7pm (basically the CBBC Channel before the CBBC Channel) and had no BBC Choice branding on it at all, just a standard 'CBBC' logo apart from the BBC Choice DOG.

Another thing to add that I forgot - 'CBBC on Choice' had prerecorded in-vision continuity with Michael Underwood in Studio 9 AIUI, whereas it seems from that clip that the original 'CBBC Choice' just used whoever was CA for Choice that day (I presume prerecorded also?).

Looks like a dodgy edit to me - if you pause it quickly you'll see the yellow background of the usual Live and Kicking logo.
Interestingly enough, those L&K Replay titles were already out of date because on the actual L&K that day they'd introduced new titles with a shot at the beginning of the then-new TV Centre entrance (which then cuts straight back to the old shot!)

The vast majority of CBBC on Choice was pre-school content due to it being on during the day when older children were at school - I'd say it was more a proto-CBeebies. Ran on a four hour loop much like CBeebies originally did as well.
