About the fact that Sky boxes only support two symbol rates, does anyone know if this is actually a hardware limitation, or if it's merely that the software doesn't allow you to select anything else?

The hardware is capable of receiving symbol rates from 10000 to 27500+, so it's a firmware issue.
That said even if they were freed up most boxes would not be able to resolve SCPC channels such as this.

No problems, I wish I spotted it earlier though, I don't think they are showing Keeping Up Appearances at the moment, but Porridge is on at 12.30PM.
Hopefully it's still on tomorrow.
As to the symbol rates, it is a limitation imposed by Sky on the software side, maybe there may be a hardware issue, but Sky boxes are designed specifically for Sky use, non Sky receivers have no such issues/limitations but are not compatible with Sky Digital transmissions except FTA.
