Bear in mind the camera needs to find them, what if they flat refused and didn't do the over the top reaction, what if they'd popped to the toilet in the last ad break and weren't being allowed back in.
I expect they already know who is going to be playing before the show starts, it may still be a random draw, but a random draw done an hour ago from only a selected number of people.
Further to the random draw, I notice the credits (for this series at least) have a credit for "Surprised Audience Member" which I think is the person chosen for Win The Ads.
That being said, I did notice two or three weeks ago the credits for Takeaway, after the regular "presented by, starring, produced by etc" names, just followed with a "wall" of names in alphabetical order not being broken up.
Almost certainly selected rather than at random now - and they never say they'll be selected at random and unlike the original run the VT feels like it switches to the chosen contestant rather than "randomly" choosing someone. Also don't see the point in their photos being at locations around the world - it was the kind of touch which worked when they first did it but now seems pointless.

Regarding the Win the Ads player, I again presume that the random selection is from people in the audience who have pre-agreed to play, and can be nothing but random in this post-production post-phone scandal era (even if it's prerecorded and random).
Interesting that the fact that the prizes comes from " an ad break in one of ITV's biggest shows" (did you watch it? "no") is actually in the legal terms and conditions, even though it increasingly doesn't look like an ad break and just prizes from some companies who have paid to feature and get a free mention on TV.
It also says if they lose they don't win anything. What about the 'consolation prize', is it just a prop?

This week the contestant did happen to have watched Philip Schofields "You're Back in the Room" which this weeks adverts were taken from.
The contestant who is given the opportunity to play the Game during the Programme shall be randomly selected from the fifty studio participants (who will form part of the Programme studio audience)
From those T&CS, it says that only fifty out of the 600 or so in the audience are in the running.
