I imagine there wouldn't just be someone sitting around on the offchance that the presenter on-screen starts throwing up over the desk, but there would always be someone around who could continue on-screen until a replacement arrived - the sports presenters for example.

Yep, a few more correspondents out there now like David Bowden, and the Skystrator's been set up in the virtual studio.
I've noticed they've now started to run promos for the return of Jeff Randall Live, 7:30 Monday-Thursday.
EDIT: Looks like there's a fire alarm in the Sky News Centre. Just now there was a sound in the background which I assumed was coming from the location of the person being interviewed in Gaza, but then Lorna cut him off to go into an ad break at the unusual time of 11:05, and have come back with an unscheduled recorded programme which is presumably coming from the main Sky playout area (no DOG or ticker or anything).
Back now, Lorna confirming it was a fire alarm.
