Why was I under the impression that Nina, like Natasha, was in fact freelance, and therefore what days she/they work probably varies depending on need and convenience...?

Natasha was originally employed temporarily as Nina's maternity cover. I dont know what Natashas current status is. Nina is not freelance and works occasionally on the Lunchtime news (days seem to conflict) and is the Main Presenter of London Tonight

Yes, but I was under the impression both were freelance. Natasha was freelance while she was at the BBC, after all. That doesn't mean they don't have fixed/regular roles or days.

Finally Natasha is back, I really do think Natasha and Alastair pair up well together. Even more so when Alastair is with Mary...

Yes - freelance doesn't imply temporary or ad hoc.

It seems to be that a more high profile presenter is brought in to do the Sunday news.

To be brutally honest, there should be no need for weekend news teams, for anywhere.nt just ITV. Like quite a lot of other places, the workers take it in turns to do the weekend shift. The same could be said for overnights, but that may be more complicated due to the workers needing the previous day off for sleep etc.

TV viewers are creatures of habit though, and it makes sense to employ people to do Monday-Friday as the majority of people will tune in at the same time every day (although not at weekends), for continuity's sake. I would hazzard a guess at saying that the Weekend News viewership is less 'loyal' and depends more on the primetime lineup around it, and they probably care less about continuity. If they had a stable presenter for Saturdays and Sundays it would probably work just as well, and save the others having to take extra days during the week.

Historically the weekend presenters have been the main relief presenters for weekdays, but nowadays ITV cover most shifts with presenters of other weekday bulletins, with James Mates and Natasha Kaplinsky thrown into the mix occassionally.

For about a decade now though ITV have generally had a more high profile presenter anchor the Sunday bulletins, and then nobody in particular hosting the Saturday editions.
