There is a button on the camera mount to switch from your camera's output, and studio output. Pretty standard stuff.

Steve has done the Lunchtime News on several occasions and the Evening News at least once... AFAIK he might have done the 10.30 before...

Lunchtime news in 14:9

It was briefly stretched to 16:9 on the News Channel but is now back 4:3

That's not quite what I was asking. I'm aware of being able to toggle between camera and studio output. That is, as you say, pretty standard stuff.

Presumably there is a separate graphics engine serving VR for each of the cameras?

Yeah via Sky it went out in 16:9, though cropped, it was still in the 16:9 frame.

I wonder why they've done this.

As for analogue, it went out in 4:3 in central west, but 16:9 on sky, something that central news has done on odd occasions for the past few weeks.
