It does change quite frequently- it's not always been in N6!

Where's it coming from now? No longer the 1/6/10 studio.

I didn't see it, but I would guess that it was probably coming from the studio at Millbank, a redress of the one also used for the Daily Politics and Straight Talk, albeit with an oval glass-topped desk (though not illuminated in the style of other current BBC News desks). It's come from there a number of times recently.

They just tend to use normal sets, yet don't light up the desks normally, and change the backgrounds.

Yep - Hardtalk quite often comes from the BBC Westminster studios at Millbank. They use these studios when they have a political guest who is easier to interview near Parliament, or when they have to record at a time when their usual studio facilities are tied up with the One, Six or Ten O'Clock News.
The Daily Politics set is used, with the plasmas filled with Hardtalk branded graphics, and a Hardtalk PBU (photo blow up) placed in front of a desk (not sure which desk)
