Well I would imagine they wanted the northwest to at least receive a Sunday teatime bulletin with a similar production value -- Border news really would be glaringly substandard. Mind you isn't the overlap area only [rural] south Cumbria -- at least Yorkshire and Granada are either end of the busy M62 commuter zone.
Also, a lot of Yorkshire and Granada's football/rugby league teams are in the premier/first divisions, so faced each other this weekend. I think the only team Border contain of any note is Workington.

Given that Granada have newsrooms in Liverpool and Chester and Blackburn (I think), couldn't a local reported have delivered the prepared bulletin, or are all the other offices closed at a weekend?

Though Calendar Sport gave out no specific Football results for the North West, they had most of the Super League ones listed, which was handy as Warrington played Hull today. Though in the past when there has been no Border News they've shown Granada News.
Regarding Granada's other Newsrooms, I don't think they'd be able to come on air, as there are no other proper studios, and everything is completed such as Editing at Manchester, then presumably Leeds would have something to do with that for afterwards.

They have small studios, but only for interviewing, so you could say it is done in the same way as BBC Local Radio, where they have one room that only has a camera, that is linked by Satellite to the main centre, this being Manchester. But IIRC ITV Granada want to close down Chester and Lancaster and replace them with some up to date satellite trucks.
Though in the event of tonight, it must have been very short notice and last minute, hence why they handed over to Calendar News, which can be done at the flip of a switch. If for whatever reason that there was notice that a bulletin couldn't be done, it would be likely it would come from Liverpool, or put someone in a CSO in Leeds or whatever option. Though this hasn't happened before.
