Radio Times Listings 8th April 1997

So, I was born on the 8th of April 1997 (Yes, I am 22) and would love to know what was airing on TV the night I was born? I found BBC One and Two listings thanks to the BBC Genome, but would like to see what was on Granada, Channels 4 and 5 too.

There's a few here for ITV, none that match that specific date but it'll give a general idea (note that ITV after 7pm was pretty much the same across the regions by this point). You may also want to check with your local library (the bigger ones, not the tiny community ones) as sometimes they have a collection albeit possibly as part of what was published in the newspaper.

With regards to Channel 4, again it might be worth exploring the local library or archive online newspaper listings where available as that would be be your best bet. I'm sure there's an untapped archive I've yet to find for Channel 4 listings (and ITV for that matter), unless somebody else knows better.

Note that just because a schedule in a newspaper says this that and the other was scheduled to be broadcast doesn't actually mean that it actually was.
