I'd advise keeping IE7 over IE6 just for the security enhancements.

I don't mind the new interface myself.

I thought the new interface was a little strange at first, but I've since adjusted to it (dispite the fact I hardly use it). I don't have a problem with it's colour scheme, as it uses the colour scheme every other programme does (in other words, whatever Windows tells it to use).

Forget UI, I would recommend anyone still with IE6 upgrade to IE7, in terms of security it's really been enhanced and overhauled compared to earlier versions. Even if you don't use it, it will still result in a more secure system (due to IE's integration with Windows and other applications).

ive made the switch to IE7. i must admit the security is much improved but the interface will take getting used to

I think you press F10 to open the toolbar, which is a lot easier than looking through the icons to see whats what
