Also, don't assume network points are carrying ethernet data. Analogue video can be sent over it for a few quid, not going anywhere near a computer.

In professional theatres there are often two cameras; one normal colour camera, and one low-light / IR camera so that the stage manager can see what's going on even during a blackout.
I have played in theatres where monitors showing the colour image are dotted around backstage, in the green room, foyer, bar etc. If you are lucky these are occasionally in dressing rooms too, although usually you have to make do with just an audio relay.
Theatres and larger dedicated performance areas are different - theatrical productions tend not to look terribly good from a fixed camera - they're typically used for the stage manager to check for clearance before cueing lighting, sound, the fly-floor and other departments. Occasionally they will distribute the video to a front of house area like the bar, but its not designed to be watched per se.

The thread started off like you wanted to know how something was done, but now it seems you were wanting to know how to do something.
Bilky - you can also send audio and non-ethernet data down CAT5 cables easily too. I'm often using network points in buildings to send lighting control data around with a set of simple cable adaptors. With more expensive adaptors / boxes you can send DVI, HDMI, digital audio multicores (e.g. 128 channels of audio down one bit of cable), or basically anything! The cable's cheap, and lots of places have had it installed *EVERYWHERE*, and that's been taken advantage of.

Interesting stuff - I had no idea it could be so versatile. As I say, anywhere with trunking for power sockets usually have network sockets everywhere, so it's no surprise it comes in handy for you.
