I guess one consequence of social distancing is that CNN has abandoned its eight pundits seated around a table format.

They are still there - just spread across NY and DC. They just haven't used them that much as the results are so tight and the 'magic wall' is much more interesting than commentary. However, as soon as the result is declared - I expect a revert to form with non-stop studio and WebEx talking heads.

The Arizona call and figure of 264 seems to have originated at AP, so any outlets that are using them have the same result. I notice Al Jazeera's interactive results page is one of those

Just as an aside, Fox News was one of the first to call Arizona for Biden (very early) which caused yet another pantomime moment of the anchors getting someone from their 'Decision Desk' on air to explain themselves. Apparently the Trump campaign told Fox to switch it back to too early to call.

CNN appear to have switched away from the Washington DC 'Election Center' overnight at some point to another New York studio, complete with additional magic wall.

How do ITV get their results coming in from all of the Electoral College votes when compared to the BBC?

Sorry if I'm stating the obvious, but it's good to remember that many of these numbers are projections (educated guesses) as opposed to actual confirmed results - that's why they will vary more between broadcasters (particularly compared to UK general election results, which are only counted after the declaration).
