Don't forget the Pret that's in BBC Cardiff Central Sq building. That was up and running long before the BBC build was complete. Many a happy site meeting in there to bypass all the h&s and PPE stuff required to enter the building, with (IMHO) superior quality coffee to any of the other large chains

I wonder what the record for most sets in one studio in one day is?

In the pre-BARCO days, TC7 did Breakfast, Working Lunch, Newsround and Newsnight - but some of them were semi-permanently set up so I'm not sure whether that counts as a full turnaround.

Yes. For a time during the first lockdown they used some of the same set pieces.
